Simple steps on how to prepare Coconut Jollof Rice



Ingredients

• 1 kg Beef
• 5 Plum Tomatoes
• 2 Tatashey(Red bell pepper)

5 chili pepper (Shombo)
• 5 Red scotch bonnet pepper(Ata rodo)
• 1 cooking spoon Tinned tomato puree
• 1 Red Onion
• 3 Cloves Garlic,minced - optional
• 2 whole coconuts
• 4 Bay leaves 'whole'
• 1 tbsp. Dry Thyme
• 1 tbsp. Curry powder
• 1 tbsp. Dry Thyme
• 1 tbsp. Curry powder
• 5 Seasoning cubes
• 3 cups Rice
• Salt to taste
• Vegetable Oil for frying

Step1: Wash your beef very well,place in a pot,season with crushed seasoning ,salt,garlic,curry,thyme,mince ginger and allow it to cook until is tender and soft. Separate meat from sauce, fry meat in hot oil
Step2: parboil the rice or you can soak the rice in warm water for few
 mins. 
Step3: Remove seed from tatashe,rinse tomato, scotch bonnet,chill pepper,onion and blend to puree .pour boil the puree until there is no water in it 
Step4: Remove coconut from shell,cut into pieces and blend with some water,sieve to separate milk from chaff 
Step5:Add tin tomatoes to puree,mix together and fry with the oil used for the meat For 5mins and stir Step6: stir in the meat sauce and coconut milk. Taste to check for salt and seasoning,correct if necessary .add par boiled rice,make sure d sauce covers the rice if not you can add water to it .Add bay leave
Step7: allow to cook,once you notice that the water is dried up,use your spatula or wooden spoon to turn it..u can now turn off the burner..
You can use chicken,Turkey depends on what you want
